1. Shirakaba Sanso (Sapporo miso ramen)
The theme of “Noodle House Shirakaba Sanso” is to “serve better dish than anyone else. The soup, made with carefully selected ingredients such as a blend of white malt miso and white miso, sesame oil, and garlic, is rich but not dull. The delicious broth is perfectlly matched for the well-curled noodles.
2. Ramen Sora (Sapporo Miso Ramen)
Ramen Sora is a Sapporo ramen shop that has shops outside of Hokkaido and outside of Japan. The shop selects each and every ingredient in its pursuit of deliciousness. The soup is made with a clear broth extracted from Hokkaido pork, topped with good smell of grilled miso, and the noodles go well with the rich, mellow, and the soup. The fresh aftertaste of the ginger also makes this ramen very addictive.
3. Sapporo Hiten (Sapporo Shio(salt) Ramen)
Sapporo Shio Ramen is the pride of Hiten, andis the most popular Sapporo Shio Ramen. The soup is a combination of rich chicken and seafood broth, with the smell of burnt garlic and lard added to it. The soup is made with a strong focus on quality, and you cannot help but drink it up.
4. Ajisai (Hakodate Shio ramen)
Ajisai has been serving Hakodate salt ramen since the early Showa era. Ajisai’s ramen is characterized by its clear soup through which, all the way to the bottom of the bowl can be seen. The soup, made from a combination of pork and chicken bone broth and kelp from southern Hokkaido, is known for its light yet rich taste.
5. Baikoken (Asahikawa Shoyu(soy sauce) ramen)
Baikoken is a representative of Asahikawa shoyu ramen. The soup is composed of an animal broth and a seafood broth, which is originated in Asahikawa. The original medium-thin noodles are perfectly matched with the soy sauce soup, and the ramen won the Grand Prize at the first Asahikawa Ramen Grand Prix.
