Le crabe des neiges est un crustacé dont l'habitat naturel s'étend dans toute la mer du Japon. Il est également connu sous le nom de crabe Matsuba ou de crabe Echizen et possède 10 pattes.

La saison de pêche s'ouvre en hiver, et il existe des restrictions quant à la période de capture des crabes mâles et femelles. Une fois pêché, le crabe des neiges est distribué directement sur le marché ou vendu par correspondance.

Le crabe des neiges est souvent consommé cuit, mais si ce dernier est fraîchement pêché alors il est préférable de le cuisiner en sashimi. Le shabu de crabe est également un plat incontournable. Une partie des crabes débarqués est également transformée en boîtes de conserve, alors il peut par exemple être cuisiné en porridge, avec du riz frit, ou encore avec des pâtes.

En outre, de nombreuses personnes pensent à tort que le crabe royal fait partie de la famille des crabes. Or, il fait partie de la famille des bernard-l'ermite, une espèce donc différente du crabe des neiges.
