私たちはこの果肉・果皮の活用として、試行錯誤の末に、ビールの発酵工程で使用することで、チェリーのアロマやフレーバーを引き出すことに辿り着き、2024年1月、世界初の「コーヒーチェリービール」を開発することに成功しました。発酵と醸造の力で、新たな命を得たコーヒーチェリー。ぜひご賞味ください。

■A new craft beer that contributes to reducing food waste
The outer layer of coffee beans, known as “coffee cherries,” is often discarded. With a sugar content of around 20, this part is not only deliciously sweet, but also highly nutritious.
After much trial and error, we discovered a way to utilize the pulp and skin of the fruit. By using them in the fermentation process of beer, we were able to bring out the cherry’s aroma and flavor. In January 2024, we successfully developed the world’s first “coffee cherry beer.” Through the power of fermentation and brewing, coffee cherries have been given new life. We hope you enjoy it.
